Fuchsia Tiki Bar

215 Main St, Lower Level, New Paltz

Paradise has arrived in New Paltz in the form of Fuchsia Tiki Bar. Inside the Ulster oasis, tropical leaves cover the walls while moody lighting offers a funky, semi-secretive ambiance. The bar makes its own syrups and infusions, including orgeat — a blend of almond syrup with orange, spirit, and other mixes. Sip them in festive drinks like “Tiki Torch,” which lights up the room with tropical juice, coconut, and tequila topped with a flame.

Each of the beverages are displayed in special glasses that pair with their respective drinks, so you can easily latch onto a signature sipper here. The piña colada, for instance, comes in a coconut glass, while the rum-blended “Pirate’s Port” serves up heady flavor inside a ship-shaped cup. Food’s available too, and comes in the form of snack-style appetizers like sushi rolls and chicken satay.

Lil’ Deb’s Oasis

747 Columbia St, Hudson

Party in Lil’ Deb’s new private dining room, at festively decorated seating with bright flowers and candles, or by the bar. Eclectic lights illuminate the area, while pink bar stools complement the funky aesthetic with tropical flavor and lite-brite décor. The atmosphere is tropical, but it’s also neon, kooky, and a genuine culinary destination. On the menu, Lil’ Deb’s treats diners to sweet plantains, hot tamales, and ceviche del dia — a must for anyone who wants to munch on fresh, flavorful bites alongside colorful cocktails. If you’re in the mood for an entree, go for the plato tropical with rice, lentils, and greens or dig into a whole, fried fish (yes, really). Lil’ Deb’s drinks range from brews and wines to non-alcoholic beverages like kombucha, flowering tea, and an oat drink. Top your visit off with the eatery’s funky, customized swag that ranges from standard t-shirts to silly stickers, totes, and even underwear.

Tiki Temple

206 Main St, Poughkeepsie

Tiki Temple’s cozy lounge is perfect for happy hour or casual date nights. Bask in the sun on the patio and enjoy half-priced tacos on Taco Tuesday. Tiki statues painted on the walls bring the oasis vibes to the intimate seating area. As for the menu, it’s a fusion of Mexican and Asian combinations that range from homemade chips and guac to pork and chive dumplings. Tiki Temple makes its own in-house falernum — a rum liqueur with clove, ginger, and lime. Its cocktails are crafted to encapsulate different flavors, so expect everything from pear to eggnog make guest appearances on the beverage list. If vanilla sips are your thing, go for “Cut Your Teeth,” which features a combination of passion fruit, guava, vanilla, vodka, and ginger beer that will warm you up á la the tropics. The “Siren’s Song,” meanwhile, incorporates rum with guava, peach, pear, and almond — and is practically impossible tor resist.
