Brasserie 292 combines the old-world charm of Poughkeepsie’s historic Main Street district with timeless brasserie fare. Cocktails are made with fresh juices squeezed daily to ensure pure flavors, and all syrups are house-made. Favorite cocktail to drink
The daiquiri. I’m fascinated by Latin American bar history and tiki culture. Rum is such a diverse spirit and I think it’s incredible how much the choice in rum can alter the daiquiri.

Favorite cocktail to make 
Split-base (multiple base spirit) cocktails. Different spirits can accent and play off of each other so well, and make up flavor profiles that are difficult to find in a single spirit. Three of my favorite cocktails on our menu right now are split-base: One is a split of Calvados and rye whiskey, another is mezcal and Jamaican rum, and the other is pisco and gin.

How did you train to become a bartender?
My introduction to bartending was really a right place, right time scenario. Many of the bars behind which I’ve resided have been restaurant bars, so I’ve collaborated with chefs just as much as with other bartenders. Because of this, I was fortunate enough to be trained how to pair ingredients and flavors with the thought process of a chef and many of the bar programs I have been involved with reflect that.

1 oz Amaro Sfumato

1 oz Pineau des Charentes 

¾ oz lemon

¼ oz honey

Combine ingredients in cocktail shaker, add ice and shake until chilled. Strain over ice and garnish with an orange peel.
