The Hudson Valley’s accommodation options have grown in recent years from the small batches of B&Bs and main-road motels to an increasing focus on both high-occupancy and luxury options. A group of new hotels, planned to open anytime from this fall to 2019, run the gamut from inventive guesthouses to destination spas and resorts, complete with vintage decor, specialty restaurants and organic produce markets. Set near some of the area’s best scenery and strongest food scenes, these properties provide both memorable vacation spots and wellness retreats for locals looking to get away from it all.
Mirbeau Inn & Spa

Located on 2.8 acres within the village of Rhinebeck, the Inn will include 50 guest rooms and a “French-inspired American” Bistro & Wine Bar with locally-sourced ingredients. When it opens in 2019, Mirbeau will have over 12,000 square feet of spa space, indoor and outdoor, on the wooded grounds, including water features, hot plunge pools, and “Himalayan salt saunas.” Mirbeau already operates several AAA-rated properties in Skaneatlas and Plymouth, though Rhinebeck is to be inspired by “French impressionist painters” in its design.
For those planning to spend a weekend, surrounding Northern Dutchess provides plenty to do, including top-flight restaurants in Rhinebeck, miles of walking trails at the nearby Staatsburg and Clermont historic sites, and a number of local breweries and distilleries scattered throughout the area.

This ‘rural chic’ hotel near the center of town has 12 units, including standards, suites, and two cabins set alongside a wooded stretch of the Tannery Brook. Rooms include unique furnishings, private outdoor areas, and even heated bathroom floors. In the lobby, customers can drink coffee and peruse an “artist curated” selection of vinyl, which can be brought back and listened to on each room’s record player.
Woodstock’s food scene is on the rise, thanks to local eateries like Garden Café and Shindig, whose owner, Ryan Giuliani, also co-owns Woodstock Way. For a local day trip, take a ride over to Saugerties and Kingston, where even more dining options proliferate. Easy access to the Catskill Park and unique sites like the Karma Triyana Dharmachakra monastery make Woodstock a nice base for a weekend.
Valley Rock Inn

The pet project of Pillar of New York awardee Michael Bruno, Valley Rock is designed as a “walled village” within walking distance of the Sloatsburg stop on the NJ Transit line. The property’s 17 rooms sit within four renovated historic buildings furnished with antiques, vintage furniture, and other bespoke items. The grounds also include a gym, farmer’s market, art gallery, pool, bocce courts, and two farm-to-table restaurants with their own twists on American dishes.

Should you feel like leaving, the Valley Rock’s vicinity is full of great hiking and outdoors opportunities at Sterling Forest and Bear Mountain. It is a short drive to West Point Military Academy and only a hop further to Storm King Art Center, where visitors can see installations from Maya Lin, among others.

The Hilton Garden Inn’s 143 rooms include standard amenities as well as Keurig machines, and complimentary WiFi. The building also includes a workout room, restaurant, salt-water indoor pool, and a 1200-square-foot conference space. It runs a shuttle from the Dobbs Ferry train station, with both pick-up and drop-off.
Based in a complex with an IPIC movie theater and day spa, the hotel is also a short distance from local sites in Tarrytown and Dobbs Ferry, including the Tarrytown Music Hall, Rockefeller estate at Kykuit, and Sleepy Hollow, the setting of Washington Irving’s famous story.
