The Hudson Valley is booming with prime breakfast and brunch spots, and we can’t think of a better way to start the day than by indulging the best of all worlds with a hearty burrito. You’ll need a fork and knife to eat these, but we promise they’ll leave you satisfied long after lunchtime.

Phoenicia Diner, Phoenicia

Weathering changes in ownership and changing times, the Phoenicia Diner has a long history of serving customers drawn to the Catskills’ natural beauty. Their breakfast burrito, available to order at anytime of the day, comes with the standard accouterments (scrambled eggs, cheddar cheese, and black beans), but theirs subs chorizo in for bacon and is also served with a spicy green salsa on the side, giving you that necessary a.m. kick.

Hudson Hils, Cold Spring

This cozy Cold Spring eatery has a bountiful breakfast menu, making it a bit difficult to narrow down your options, but the breakfast burrito is a no-brainer if you’re in need of filling up without inducing a food coma. Similar to Phoencia Diner’s take, Hudson Hils packs theirs with farm fresh scrambled eggs, cheddar cheese, and chorizo sausage, but the dish also includes their country potatoes and a mild-pork green chili.

Beacon Bread Company, Beacon

This bustling Beacon brunch spot specializes in baked breads and pastries, so their house-made cilantro tortilla makes for the perfect breakfast burrito wrap. Stuffed inside are scrambled eggs, Canadian bacon, and cheddar cheese, before it’s smothered with black beans, fresh pico de gallo, smoked onions, and an aioli glaze.

This go-to spot for hungry college kids boasts not one but two burritos for brunch enthusiasts, pleasing both carnivores and vegetarians alike. At this diner-vibe joint, their veggie offering is filled with eggs, potatoes, peppers, onions, spinach, and avocado, while the B-Side Burrito features eggs, home fries, chorizo, and bacon wrapped in a warm tortilla. Both options are topped with sour cream and served with a side of salsa. Naturally.
