There is an old adage that wedding cake is barely eaten. However, when these stunning seasonal beauties are presented, guests will be tempted to swipe their fingers across the buttercream.

Bursting with blooms, this cake channels the excitement of new beginnings. Inspired by the wild blooms of spring, the fondant-coated cake is adorned with handmade, sugar David Austin roses, cosmos, bearded iris, Dutchess peonies, lavender, sweet pea, and gladiolus. “They float beautifully upon a muted, distressed background of mottled blue and gray house-made white chocolate fondant,” explains chef and partner Jay Muse.

This boho-style three-tiered cake is perfect for a decadent summer soiree. “The inspiration for the cake was my summer garden, where we enjoy an ever-changing variety of flowers,” says Susan Lawrence owner and baker Mark Kramer. Slice open the Tahitian vanilla cake for another ethereal nod to the season. “Nothing says summer like fresh raspberries and a cloud of lemon mousse cremeaux!”

Disabuse yourself of the idea that fall color palettes can only feature burnt orange and maroon. The bakery’s signature, luscious, buttercream coating — perfected by owners Miranda Bucciero and Lauren Gibaldi — paints the outside, adorned with seasonal floral arrangements styled by Artistic Manner Flower Shop (Pelham) for dazzling pops of color.

Crisp and classic was the goal of this wedding cake, which, with its shine and “naked” layer, is especially striking in front of a marble fireplace. “I wanted our winter-wonderland wedding cake to have a touch of icy blue for that something-blue but still feel like a traditional white wedding cake. Finally, a little bit of shimmer and snowflakes tie in the snowy, winter vibe,” says owner Ashley Russell.
