Steve Gonzalez and Kate Galassi moved to Coxsackie in 2018 when Sfoglini, the organic pasta company where Gonzalez was head chef, moved from their original Brooklyn headquarters. The pair fell in love with the community and Gonzalez decided to open his own pasta biz.
When a former auto garage on Route 9W became available, the couple knew it was meant to be the home of their new venture. In March, Via Ravioli opened a pasta shop designed to feed the town they love.
The stylish shop carries everything you’d need for an authentic Italian dinner. The team makes fresh pasta daily, including vegan options. Via Ravioli also sells homemade pasta sauces, ready-to-bake lasagnas, meatballs, tiramisu, and even pantry goods.
