Eagle-eyed readers of our January cover story on pizza already know that the Cosimo’s Restaurant Group just opened a second Pizza Shop location in Fishkill. The original Pizza Shop, which can be found in a historic building on Newburgh’s waterfront, began offering both traditional and thin-crust “crispina”-style pizza — as well as sandwiches, salads, and other Italian specialties — two years ago. The new restaurant, on the corner of Route 9 and Fishkill’s Main Street, continues in the same vein: Unique pie toppings include roasted poblano chili, shrimp, potato, and pesto artichoke, and diners can also opt for whole wheat or gluten-free crust at an additional charge. Craving Italian food, but not pizza? The menu features bruschetta and arancini (Sicilian rice balls), baked rigatoni, stromboli, calzone — and cannoli and zeppoli for dessert. The family-owned Cosimo’s eatery empire now manages seven local restaurants, including Cosimo’s in Poughkeepsie and Torches in Newburgh.
