Ahh, comfort food. It comes in so many mouthwatering, luscious, smooth-textured, melt-in-your-mouth… vegan dishes? How about a house-made seitan cutlet, double battered and fried in 11 herbs and spices, served on a roll with lettuce, tomato, mustard or mayo — all vegan, with a side of sweet potato fries and vegan whoopie pies for dessert?
If the word “vegan” creates the mental picture of a stark white dinner plate with a sprig of lettuce, a stalk of celery and a salt shaker, Nancy Lys, owner of Thank Goodness It’s Vegan in Goshen, can enliven your taste buds to discover 100 percent plant-based vegan comfort food.
“I’m excited to meet people. I’m happy to cook for them,” says Lys. She started her business four years ago with a food truck and restaurant in Chester. Lys relocated in the spring to a larger building on West Main Street in Goshen, just minutes from the LEGOLAND New York Resort.
With indoor and outdoor dining, the expansion includes a TGIV Café serving vegan ice cream, milk shakes, deli items, salads, baked goods, juices, and a hot food table. “You can get it and go, with something different every day,” says Lys.
Lys makes food fresh daily, but she lets Vegan Treats, based in Pennsylvania, take care of the cannoli, raspberry Danishes, whoopie pies, tiramisu, donuts, and sticky buns that she features in her restaurant.
And Lys doesn’t discriminate against meat-eaters. “A lot of meat eaters don’t want to eat [only] meat,” she says. “I love feeding people. Let’s just eat!”
