Diet and fitness go hand-in-hand. Thankfully, this delicious dessert — made with protein-packed chickpeas and peanut butter — looks exactly like chocolate chip cookie dough, only it’s more nutritious.
Prep time: 10 min.
Yields: 24-28 balls
1 1/2 cups chickpeas, cooked
1/2 cup all-natural smooth peanut butter
1/3 cup honey
1/4 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
1 1/4 cup ground oat flour
1/3 cup mini chocolate chips
Place cooked chickpeas, peanut butter, and honey in a food processor and blend for about a minute on high or until the mixture is smooth.
Add cinnamon, vanilla extract, salt, and oat flour and pulse until combined. Mixture should be similar to cookie dough consistency. Pro tip: If it’s too dry, add more peanut butter; if too wet, add oat flour.
Add chocolate chips and pulse until combined.
Scoop out a heaping tablespoon of dough and roll between palms to form a ball. Repeat. Store in the fridge or freezer until ready to eat.
