Get Ready: Middletown’s Mix N Mac Announces Its Second Location

In honor of Mac and Cheese Day on Saturday, July 14, Middletown’s own elbow noodle hot spot, Mix N Mac, announced the opening of its second location in Wappingers Falls.

Run by husband and wife duo Michele and Jason Whipland, the restaurant remixes the traditional concept of mac and cheese to make unexpected pairings. From Sloppy Joe to Lobster Mozzarella, the selection of mac and cheese is unrivaled. It is the Hudson Valley’s love for the 35 types of mac and cheese and eight types of fried balls that propelled the two owners to expand.

“We have really mastered what we do in Middletown and you grow when there’s a need,” says owner Michele. “People have just been asking and asking so — why not?”

Planned to open toward the end of 2020, the new location will continue to provide the restaurant’s favorite cheesy delights and family friendly atmosphere while also promising new and inventive recipes like Chicken and Waffle mac and cheese.

“We have a huge amount of Hudson Valley people who travel an hour or 45 minutes to come and see us,” Michele says. “We just think it would be such a great addition as a local restaurant.”

Mix N Mac has mac and cheese for everyone. If you are a vegetarian, you can munch on the Veggie mac and cheese with roasted broccoli, cauliflower, carrots, and mozzarella. If you prefer more carnivorous endeavors, the Fiery Steak mac and cheese with a spicy pepper blend, broccoli, cilantro, and pepper jack is perfect. You can even order gluten-free noodles!

Marley Mac

Anyone can make this delicious at-home mac! 

Ingredients:

12 oz cooked noodles
2 cups heavy cream
4 oz chopped herbs of your choice (We used basil, cilantro and parsley.)
1/2 T salt
1/2 T black pepper
1/4 T white pepper
2 T garlic powder
1 T onion powder
1/4 T nutmeg
12 oz of your favorite cheeses (We used Gorgonzola, Asiago, smoked Gouda, Mozzarella and Swiss.)

Method:

Add 2 cups heavy cream to a saucepan on high heat and add dry seasoning until it comes to a rolling boil.

Reduce to medium heat and cook five minutes to thicken. Add all cheeses and cook 5-10 minutes or until thick. Add noodles and cook another three minutes. Turn off heat and add chopped herbs.

Plate and top with crushed red pepper, Asiago cheese, and fresh herbs. Enjoy!
