Make a statement during the holidays with billionaire shortbread cookies that use an easy butter cookie dough as a base.
Makes about 24 cookies
Ingredients:
- ½ Master Dough Recipe (18 oz.)
- ½ cup heavy cream
- 6 oz. high quality semisweet chocolate, chopped
- 1 jar (15 oz.) prepared dulce de leche (must be a very thick variety, look for Kreche)
- Edible gold powder (available on Amazon)
Baking accessory:
- Fluted rectangle cookie cutter (about 2″ × 2½″)
Instructions:
- Preheat oven to 350° F. Roll dough out onto a lightly floured surface to an even ¼″ thickness. Cut into rectangles and place cookies on a baking sheet lined with parchment paper. Bake 12–14 minutes or until very lightly golden brown.
- While cookies are cooling, make a chocolate ganache by heating the heavy cream just to a simmer. Remove from heat and whisk in the semisweet chocolate until smooth.
- Once the cookies have cooled, spread an even ⅛″ layer of dulce de leche from edge to edge on top of each cookie. Then dip the tops of the cookies into the warm chocolate so the dulce de leche is completely covered. Once completely cooled and set, decorate with edible gold powder by gently creating streaks with your finger or a brush.
