Aji Verde Sauce
A beautiful sauce to brush on grilled vegetables, chicken, and fish. Add jalapeño or serrano peppers for a little spice. You can also marinate meat in this, minus the cheese. —Snooks
Ingredients
½ cup mayonnaise
â…“ cup queso blanco or Parmesan
2 cups fresh cilantro leaves
1 Tbsp lime juice
2 cloves garlic, roughly chopped
1 Tbsp extra-virgin olive oil
¼ tsp salt
2 jalapeño or serrano peppers, deseeded and roughly chopped, optional
Directions
- Add all ingredients to a blender and blend until smooth, about 1–2 minutes. Yields about 1 ½ cups. Store in refrigerator for up to 1 week.
