If you are an omelet snob, you’ve found a new home. At this small but sophisticated northern Dutchess eatery, Chef Kelley Jefferson creates this beloved egg preparation in the classic French style. “They are pure with no browning and are rolled around the filling, rather than folded, so that everything is locked inside,” says Jefferson. Try the Woodsman, a delicate spinach, mushroom, and goat cheese concoction. An omelet of prosciutto, arugula, and truffle oil is also offered on special. Omelets are priced at $7 to $9.

For those who prefer the tried-and-true, take heart: The cafeÌ also offers simple fare like eggs on a roll with cheese, waffles straight up with butter and syrup, and the proverbial platter of eggs, bacon, sausage, toast, and home fries for which the cafeÌ is named. While commuters rush in for their java fix — the cafeÌ serves Pine Plains roaster Schapira’s — many customers prefer to just hang out and meet with friends over cappuccino, espresso, and lattes and take advantage of the WiFi.
