Enjoy a tasty summer drink, minus the calories, thanks to this sweet and refreshing recipe from a Hudson Valley nutritionist.

While a typical piña colada might be high in calories, this version, with the addition of lite coconut milk and flax oil, is a much healthier option. The simple, easy-to-make recipe from Westchester nutritionist Jacqui Justice can be used as a mocktail, a cocktail, or even a protein drink. Now, grab your blender, put on Rupert Holmes’ Escape (The Pina Colada Song) to set the mood, and celebrate!

Ingredients

2 oz. pure water
2 oz. pure pineapple juice
2 oz. lite coconut milk
½ cup frozen pineapple chunks
½ banana
½ tablespoon flax oil
½ cup ice
1 scoop protein powder plain or vanilla (optional)
2 oz. rum (optional)

Method

Place the water, pineapple juice, coconut milk, frozen pineapple, banana, flax oil, and ice into a blender.

Blend ingredients for 1 minute.

Add rum and blend for cocktails (optional).

Add protein powder to mix and blend for 30 seconds or until creamy for protein drinks (optional).
