These chickpea power bites taste like dessert but are packed with healthy proteins and fats to keep you energized on Hudson Valley hikes.
Diet and fitness go hand in hand. Thankfully, this delicious dessert — made with protein-packed chickpeas and peanut butter — looks exactly like chocolate chip cookie dough, only it’s more nutritious. It all comes together in a blender, which means it’s quick to whip up and a breeze to clean up afterward. Plus, not only is the recipe easy to prepare, but it’s just as ideal for school or work lunches as it is as a snack during hikes in the Hudson Valley.

Peanut Butter Chickpea Energy Balls
Makes 24-28 balls
Ingredients:
1½ cups chickpeas, cooked
½ cup all-natural smooth peanut butter
â…“ cup honey
¼ tsp cinnamon
1 tsp vanilla extract
Pinch of salt
1¼ cup ground oat flour
â…“ cup mini chocolate chips
Method:
Place cooked chickpeas, peanut butter, and honey in a food processor and blend for about a minute on high or until the mixture is smooth.
Add cinnamon, vanilla extract, salt, and oat flour and pulse until combined. Mixture should be similar to cookie dough consistency. Pro tip: If it’s too dry, add more peanut butter; if too wet, add oat flour.
Add chocolate chips and pulse until combined.
Scoop out a heaping tablespoon of dough and roll between palms to form a ball. Repeat. Store in the fridge or freezer until ready to eat.
