Oatmeal Streusel (Recipe)

A recipe from the Culinary Institute of America; use with honey almond crumb cake or other baked goods

Oatmeal Streusel

Makes 2 cups

Use this delicious streusel to add more flavor and texture to virtually any muffin or quick bread. It is easy to double or triple, and it can be held in the refrigerator for up to two weeks or frozen for up to three months.

• ¾ cup pastry flour
• 2/3 cup rolled oats
• 6 Tbsp granulated sugar
• 1 tsp ground cinnamon
• ¼ tsp kosher salt
• 3 Tbsp unsalted butter, room temperature

  1. In a large bowl, combine the flour, oats, sugar, cinnamon, and salt and stir until evenly blended.
  2. Add the butter and mix by hand or with an electric mixer fitted with the paddle attachment until crumbly, about five minutes.
