A historic, circa-1770s house is the fittingly quaint setting for Al Fresco, local realtor Graziano Tassone’s new Italian restaurant in the village of Fishkill. Complementing the cozy wood and chandelier-bedecked dining room is a menu of homespun dishes dreamed up by chef Roberto Mosconi, who once manned the stoves at Gigi Trattoria — and worked at such New York City classics as Coco Pazzo and Sign of the Dove.

One evening, Mosconi’s Mediterranean-inspired poached octopus with lentils might lead to a classic Roman-style pancetta-strewn bucatini carbonara; on another, hanger steak over a bed of comforting cannellini beans. And an ever-changing roster of nightly specials means the spontaneous arrival of such creations as orange-brightened duck.
