“Good food is universal,” says Michele Whipland, who opened Mix N Mac restaurant with her husband Jason last October. The eatery is best known for its mac and cheese dishes with countless have-it-your-way flavor combinations. “We go through about 120 pounds of pasta per day and have more than 40 ingredients to mix in your mac,” she says, reading a list that includes roasted shallots, Gorgonzola, tuna, and jalapenos.

But this fast-food-style eatery also cooks up a variety of hearty, gooey cheese melts on Texas-style toast. “We’re all about good, American gourmet comfort food, and that appeals to everyone — from kids who like a cheesy meal to older couples who appreciate our made-from-scratch recipes,” Whipland says. “Our sandwiches are large, with bite-sized ingredients and the freshest cheese — not processed — that just oozes when grilled.” One of the more popular choices is the Tomazza Melt, an Italian-inspired specialty with mozzarella balls, roasted tomatoes, fresh basil, a garlic-basil oil, and Parmesan and Romano cheeses. “We serve it with a tomato/cheese/cream dipping sauce, as a nostalgic touch to childhood meals of grilled cheese with tomato soup,” she says. “We want our customers’ dining experience to feel just as warm and comforting as the restaurant itself.”
