Following news of its new restaurant venture in Highland, Poughkeepsie’s Mill House Brewing Company recently announced the acquisition of Embers Wood-Fired Oven. Along with The Ridge by Mill House, restaurant partners and Mill House co-owners Daniel Crocco and Jamie Bishop will continue to expand their culinary empire in 2025 with the new endeavor. The Dutchess County-based full-service mobile catering business will rebrand to Embers by Mill House and will expand its offerings with new packages under the direction of Crocco and Bishop.
“We’ve worked hard to build a community around Embers for the last five seasons and have always known that we would need to pass it on to people with the same mission and love of food,” says Jen Mac Kay, the former partner of Embers, who will continue to serve as the events coordinator for Embers by Mill House. “I can’t think of a better team to lead Embers into its next chapter.”

Known for its pizza and pints, among other staple menu items, Mill House Brewing Company will now be able to bring “Mill House to Your House” with the refurbished 1963 Boyertown GMC Step-Van that boasts a custom-built Forza Forni wood-fired pizza oven. The mobile catering business offers a vintage charm and modern appeal that’s perfect for any event, and Crocco and Bishop intend to expand the food truck’s offerings with the rebrand to include hand-crafted sausages, beer-steamed mussels, wood-fired paella and pasta, and more. To complete the one-stop-shop aspect of the truck, Embers by Mill House will also offer a full bar with Mill House beers and cocktails.
“I’ve always dreamed of owning and operating a food truck, so Embers by Mill House marks a really exciting new chapter for us,” says Crocco. “When we met and spoke with John and Jen, the former owners of Embers, and experienced the charm of the vintage truck, it sealed the deal. We’re excited to introduce elevated catering options for every type of celebration, making each event more memorable.”

Embers by Mill House is now accepting bookings for private events starting in the spring of 2025. The mobile catering business arrives 30 minutes before the start of your event for setup and serves everything buffet-style for a smooth flow of service. With three different hand-forged pizza packages to cater to varying party sizes and preferences, Embers also offers a wood-fired jumbo Bavarian pretzel package and a New England seafood feast that are perfect for Oktoberfest celebrations, summer picnics, and so much more.
“This mobile catering truck enables us to bring a new level of creativity and convenience to guests for special occasions,” says Bishop. “You can expect to see Embers pop up at our new restaurant, The Ridge, when it opens next year, and anticipate that this is just the beginning of our food truck endeavors.
