On a chilly night (or any night, some would argue), a tasty and boozy Irish coffee can warm both body and soul. At McKinney & Doyle Fine Foods in Pawling, Director of Operations Andrew Sarubbi notes that “Irish Coffee is very simple, made up of only a few ingredients, but they have to be of quality.”

Ingredients
3 oz heavy cream
½ oz brown sugar vanilla demerara syrup (see recipe below)
2 oz Irish Whiskey
Freshly brewed coffee, hot
Freshly ground nutmeg
8 oz Irish coffee glass, warmed
Directions
- To Make Demerara Syrup: Mix equal parts brown sugar and hot water; whisk until dissolved and add a small dash of vanilla extract
- Hand-whip heavy cream by pouring it into a container (at least 6 oz in size), sealing, and shaking for about 45 seconds.
- To warmed glass, add brown sugar vanilla demerara syrup, Irish Whiskey, and coffee; leave about half an inch from top of glass.
- Lightly stir, then add shaken heavy cream
