Born in the South, it might be assumed that I like my tea cold and jaw-achingly sweet, served from sun up to sun down. Well, consider me the shame of my home state, but I am always boiling and brewing and steeping. To me, hot tea represents more than just a soothing beverage or glorified infused water. Time, place, and peace can be found in a cup of good hot tea. Apparently, others feel as strongly about tea as I do, as its popularity continues to soar. Why, even the Donald wants to cash in on the tea trend: Last year, the Trump organization partnered with Talbott Teas to launch a premium line of whole-leaf blends. Luckily there are a growing number of places here in the Valley where one can take respite from life’s pressures over a pot of tea.
