Hudson Valley Marshmallow Company puts a gourmet spin on the plush confections from its outpost in Beacon.

As a child, few moments surpass the joy of roasting marshmallows by the fire in summer. The thrill of standing close to the warm flames, charring the plush treats until they are just golden, and sliding the sticky goodness onto oozing chocolate and graham cracker sandwiches is the best kind of summertime magic.

Hudson Valley Marshmallow Company is here to keep that magic alive. The Beacon shop, which came onto the scene in fall 2017, aims to bring that childlike charm to the local culinary scene with its gourmet marshmallows.

“We love marshmallows and s’mores (who doesn’t?) and saw that there weren’t very many choices for [them],” says Brendan McAlpine, the store’s owner. To add a dose of flavor to the lackluster vanilla and graham varieties that dominate the market, he and his team developed an extensive range of both marshmallows and graham crackers to surprise and delight local eaters. The resulting confections are a treat for kids and adults alike, and promote mixing and matching to create custom s’mores sandwiches. Traditionalists, for instance, might opt for the cinnamon sugar graham crackers with gourmet vanilla marshmallows. Curious foodies, on the other hand, can jump on the chocolate chip crackers with chocolate marshmallows or the chocolate biscuits paired with salted caramel squares.

Of course, even those flavors are tame in comparison with the shop’s ever-changing store-only varieties, which have included Passion Fruit, Pizza, and Rainbow.

“French Toast and Cookies N Crème have been incredibly popular,” McAlpine declares. “We also sold out of the Everything Bagel very quickly.”

As for how they make the light-as-air treats, the secret is a three step process that involves mixing natural ingredients, heating them to just the right temperature, and setting the custom blend into molds to cool overnight. The preparation, which takes about 12 hours, results in marshmallows that are such a far cry from the grocery store variety that you’ll wonder how they can possibly be considered the same.

Currently, Hudson Valley Marshmallow products are available online and in the Main Street store, which also has a pay-by-weight candy bar and sells made-to-order s’mores. In the next few months, however, the company hopes to further its wholesale program to reach supermarket shelves locally and across the nation. On top of that, it will launch a s’mores kit, packed with enough chocolate, crackers, and marshmallows for six servings. Whether you opt to share them or keep them for yourself, however, is entirely up to you.
