Hudson Hil’s Café and Market

A hotspot for locals and tourists alike, Hudson Hil’s favors farm-fresh ingredients over complicated cooking techniques (see: breakfast burrito, biscuits and gravy, and gravlax). But that’s not to say they don’t offer items with panache as well. We’re talking about their chocolate eggs with fig and prosciutto: a harmony of fig, green apple, prosciutto, bacon, and leek hash atop multigrain bread that’s topped with over-easy eggs, goat cheese, and arugula. Or add some country flair with a seasonal quiche, made daily and served with field greens and fresh fruit.

Fiddlestix Café

Fiddlestix is not the swankiest place for the first meal of the day, but it may be the tastiest. Check the chalkboards for specials or just wait for the waitress to bring you a brown paper bag, on which the specials are handwritten for the nearsighted. Just as fun as the food here are the names: Want an omelet? Look under the section titled “…Humpty Dumpty Had a Great Fall.” Considering Texas toast with blueberry sauce? Order the “Tangled Up in Blue.” It’s a little greasy, a little groovy, and completely gobble-able. Our favorite is the Strawberry Fields Forever: strawberry cheesecake-stuffed French toast (you may want to bring some help).

Sure, Shindig serves lunch and dinner, but with breakfast offered until 3 p.m., it’s obvious which meal is the real deal. Nothin’ too fancy here — just good cooking from scratch: Perfectly crisp pancakes are topped with caramelized banana and maple syrup. The breakfast wrap mixes egg whites, quinoa, sautéed kale, and sriracha aioli into a surprisingly hearty handheld. Be warned: The Upstate — a ham, egg, and cheese sandwiched between a house-made biscuit — may ruin your regular breakfast spot.
