How to Have a Gluten-Free Thanksgiving

Here’s how to include your gluten-free guests during Thanksgiving — without sacrificing your favorite dishes


Are you expecting a gluten-free guest at your Thanksgiving feast? Gluten intolerance is a widespread health concern, and it’s more than likely that you’ll have to prepare some special dishes to accommodate those with the allergy.

So what is gluten exactly? Many people know it’s found in wheat, but gluten can also hide in many other grains, such as barley and rye. It’s commonly found in breads, pastas, sauces, and desserts — which clearly poses a problem for your holiday menu, as most traditional Thanksgiving dishes involve some form of gluten (except perhaps the turkey itself).

Tom Costello, chef and owner of Thyme Steak and Seafood in Yorktown Heights, shares a few tips for a gluten-free holiday:


Are there any easy flour substitutions for a dish that is gluten-centric, like stuffing or pie?

It used to be that you had to buy several varieties of gluten-free flours and combine them to make your dough, but now many brands sell pre-mixed gluten-free flour. As for gluten-free bread, my favorite brand is Udi’s, which makes a great substitute in everything from stuffing to French onion soup.


Do you have any tips for how to accommodate people with other food sensitivities like dairy?

When entertaining, I always make sure to ask my guests about any food sensitivities before creating a menu. That way, if someone is lactose intolerant, a vegetarian, or has some other allergy, you can plan your menu accordingly and know there won’t be any unwanted surprises at the dinner table.

What inspired you to make the gluten-free choices available?

I was diagnosed with Celiac Disease several years ago and wanted my restaurant’s menu to be more accommodating for people with a gluten intolerance. I also wanted to maintain the quality and taste of the food, so cooking delicious, gluten-free dishes became very important to me.
