Hudson Valley food blogger Kaitlyn Magno shares a recipe for a healthy bowl filled with flavorful ingredients like edamame and garlic.
Hawaiian-Style Edamame Poké Bowl
Yields 2 large servings or 4 small servings
Ingredients
Brown sushi rice
1 cup short-grain brown rice
1 ⅔ cups water
3 tbsp rice wine vinegar
2 tbsp organic cane sugar
½ tsp sea salt
1 cup carrots, julienned
1 cup of cucumber, julienned
2 avocados, thinly sliced
Roasted seaweed sheets
Hawaiin-style edamame
2 cups shelled edamame
⅓ cup soy sauce (like Aloha Shoyu)
2 tbsp brown sugar
1 tsp gochugaru (Korean chili flakes)
1 tsp chili garlic sauce
2 tbsp minced garlic
1 tsp sesame oil
Dynamite sauce
¼ cup vegan mayo
1 tbsp sugar
1 tsp chili garlic sauce
½ tsp gochujang
Preparation
In a medium-sized pot, bring all brown rice ingredients to a soft boil, then reduce to low. Simmer for about 30–45 minutes, or until soft.
Combine the Hawaiian-style edamame ingredients and let marinate for at least 15 minutes. The longer the better—even if made in advance and allowed to marinate overnight.
In a separate bowl, whisk the dynamite sauce ingredients together.
Assemble your bowl, starting with rice as the base. Place edamame, carrots, cucumber, avocado, and seaweed sheets on top. Drizzle with dynamite sauce and serve.
