Farm to Table Co-packers operates out of a 21,000-square-foot industrial kitchen in Kingston’s Tech City. It is one of only a handful of Valley companies that offers packaging services for fresh, locally grown produce: farm crops are brought to the facility, cleaned, flash-frozen (if necessary), and readied for sale. The fruits, veggies, and other products are packaged into everything from pies and soups to pickles, sauces, and baked goods.
Since opening the company this past June, business partners Luc Roels and Jim Hyland have worked with close to 30 farms (including Mead Orchards in Tivoli and Davenport Farms in Stone Ridge) to satisfy the region’s growing locavore market. “There was no facility to produce these types of things,” according to Hyland.
The business seems like a win-win for all concerned. “People like to know who’s growing their food, and want to support local businesses,” says Hyland. “If you support farms, they will survive and thrive.”
