Nestled in the rolling hills of the Catskills sits a true hidden gem: the Catskill Distilling Company. Located in Bethel, NY, across from the 1969 Woodstock festival site, this lively craft distillery delivers innovative whiskeys, vodka, and gin to the most discerning tastes.
Founder/Master Distiller Dr. Monte Sachs and his wife, Stacy, purchased the property in 2008 and transformed it into a bustling business, including the distillery (offering tastings and private parties), the Dancing Cat Saloon (a restaurant with live music), and a sculpture garden showcasing local talent.
Speaking of keeping it local, almost all the grains, fruit, and botanicals used in the distilling process are sourced nearby, and the spent grain (a by-prodcut of distillation) is given directly to Sullivan County farmers to feed their animals. Using only the purest Catskill mountain water, Sachs says distilling is a delicate fusion of art and science, and he is passionate about creating the most unique, handcrafted spirits available.
In tune with the Woodstock vibe, the spirits are whimsical in name and taste: Peace Vodka, The Most Righteous Bourbon, and Curious Gin, the latter exuding the essence of 14 different botanicals. The distillery is also the only place worldwide that produces The One and Only Buckwheat, a spirit made with more than 80% buckwheat.
Catskill Distilling Company is a picture-perfect day outing, but if you can’t swing it, their spirits can be found in more than 30 locations around Westchester, including Tarry Lodge (Port Chester) and Taco Dive Bar (Peekskill).
