Really Good Granola Muffins Recipe
Recipe courtesy of Raspberry Fields Farm
Ingredients:
2 cups whole wheat flour
1 cup brown sugar
¾ tsp salt
½ tsp baking soda
1 tsp baking powder
½ tsp ground cinnamon
2 cups Raspberry Fields Farms granola (set 1 cup aside for topping)
1 tsp vanilla
1/3 cup canola oil
1½ cups buttermilk
Method:
Preheat oven to 400°F and lightly grease paper baking cups.
Mix together dry ingredients, including one cup of granola. In separate bowl, whisk together the vanilla, canola oil, and buttermilk. Pour liquid ingredients into dry ingredients, stirring to combine.
Spoon batter into the prepared muffin cups, nearly filling them. Sprinkle tops of muffins with remaining granola. Be generous!
Bake for 16-18 minutes. Use toothpick to check if they are cooked through. Remove muffins from oven and let cool. No picking at the tops! Serve warm or at room temperature. They are delicious with honey, jam, or butter. Enjoy!
