Easy Banana-Nut Bread (Recipe)

Polly’s Quick Banana Bread

Note: All ingredients should be room temperature

Mix together thoroughly:

  • 1¾ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

In another bowl, blend on high speed 2-3 minutes (until lightened in color and texture):

  • â…” cup sugar
  • 5â…“ Tbsp butter

Mix flour mixture with butter/sugar until the texture resembles brown sugar. Gradually add:

  • 2 eggs, slightly beaten

Fold in just until combined:

  • 2-3 very ripe bananas, mashed
  • â…“ cup chopped walnut pieces (plus extra for the top)

Bake in a buttered loaf pan at 350°F for about 45-50 minutes (or until the sides pull away from the pan, and a toothpick inserted in the center comes out clean). Let rest about 5 minutes in the pan, then invert on a wire rack to cool. Enjoy!
