Owned by Salvador Sanchez, a native of the Canary Islands, and his wife, Duffy, this 17-year-old spot on Hudson’s main drag serves only breakfast and lunch — but don’t mistake it for a coffee shop. Sure, there’s cappuccino and latte (for less than $3), but the emphasis here is on the food. Earth Foods’ menu subtly incorporates the cuisine of the Canary Islands, which is all about fresh fruits and vegetables taken in light meals. Breakfast is served from 9 a.m. until noon, and favorites include the veggie tofu scramble, basically a stir-fry with mushrooms, red peppers, and spinach, served with garlic toast ($9.95). Omelets are priced from $6.95 to $10.50 and also pile on the vegetables. Combos include broccoli with feta and spinach with chevre. For $6.50, you can order a sparkling bowl of fruit salad or French toast with homemade applesauce. All the bread is made by Duffy using a house blend of organic whole wheat and white flours. Lunch is served all day and features wraps, priced around $9. The hot avocado wrap with cheddar and salsa is the number-one seller. The menu also features plenty of meat options, like the popular steak Caesar and grilled Cajun chicken wraps. Soups change daily: As the weather warms, look for chilled avocado-cucumber or watermelon gazpacho ($5.95 for a bowl). Closed Tuesdays. 518-822-1396
