Some nights, guests are serenaded by live jazz at the Stockade Tavern; on others, they might meet a gin distiller in town from England. But every evening they can bank on an unpretentious ambience and a finely wrought classic cocktail. Run by Paul Maloney and wife Giovanna “Jenny” Vis, this old Singer sewing-machine factory is now the lively site for a circa-1895 Pistache Fizz (Hayman’s Old Tom gin, pistachio syrup, fresh lemon, cream, egg white, club soda) and a proper Bobby Burns (Banknote Scotch, Carpano Antica Sweet Vermouth, Bénédictine, Peychaud’s Bitters). 845-514-2649; www.stockadetavern.com
