When you think of a Belgian waffle, you might imagine mountains of whipped cream and strawberries or other delicious toppings. But Liege waffles, named for the Belgian city, are different. Smaller than traditional Belgian waffles, they are crunchy on the outside and buttery smooth on the inside — which makes it possible to eat them right out of your hand, warm or cold, just as they do in Belgium, where they are a popular street food.

Fortunately for us, Pika’s Farm Table produces these ready-to-eat-anytime treats right here. Their secret ingredients are a yeast dough (instead of batter) and pearl sugar, a special type whose crystals caramelize upon contact with heat to produce that crunchy exterior. You can buy regular and chocolate-drizzled versions online from the company’s Web site, as well as at area farmers markets and select retailers.
