The Prohibition-era cocktail, Bee’s Knees, was buzzing with popularity earlier this year. Here, Catskill Provisions Distillery shares a recipe for it.
But we think the refreshing sweet-tart combo of gin, lemon juice, and honey is perfect for spring. To mix one up at home, try this recipe from distiller and beekeeper Claire Marin, owner of Catskill Provisions Distillery in Callicoon. Marin is quite the queen bee: her Pollinator gin and vodka, Beespoke gin, and rye whiskey are all infused with honey from over 300 local beehives.
Bee’s Knees Cocktail
2 oz. Pollinator gin (or your favorite gin)
2 oz. fresh lemon juice
1 oz. Provisions local honey (or any brand of raw honey)
Lemon wheel, for garnish
Chill a coupe glass in the freezer for at least 30 minutes. Add ingredients to a cocktail shaker with ice. Shake and strain into glass and garnish with lemon.
