The resurgence of gourmet salts

People stop by More Good on Beacon’s Main Street for lots of reasons. The funky and appealing space beckons with wood-hued backgrounds, a few tables, a top-notch stereo system, and shelf upon shelf of delightful culinary finds. Traditionally, customers have come in for the now-famous hand-crafted soda syrups, large collection of bitters, and artisanal teas. But more and more, they’re stopping by to pick up a pinch or two of gourmet salt.

“People are looking for all types of new culinary experiences,” says owner Jason Schuler. “Salts like Pink Himalayan are all the rage, but people don’t want to invest in expensive bottles that they may use once a year and then have to throw out. Here they can buy by the ounce, which lets them experiment.” The debate rages regarding whether gourmet salts are really healthier than table salt (they do contain more minerals), but these finishing salts are certainly more fun — their crystal structure and residual moisture add unique flavor and texture (think “crunch”) to a wide variety of dishes.
