Veteran Hudson Valley portrait photographer Michael Polito loved this month’s assignment: to capture chocolatier Oliver Kita in motion. “Oliver explained his process and philosophy of chocolate making. I could sense that he truly is proud of what he does, which along with his sense of humor made for a very enjoyable photo session. And his chocolate is amazing !” Polito also took many of the tempting photographs that appear in this month’s “Best New Restaurants.”

Rhinebeck resident Jan Greenberg, who co-wrote this month’s “Best New Restaurants,” always brakes for farmers’ markets. She’s the author of Hudson Valley Harvest: A Food Lover’s Guide to Farms, Restaurants, and Open-Air Markets. A regular contributor to this magazine, she also writes for Food Arts and the National Culinary Review, as well as for Gastronomica and Executive Travel. Her work has been recognized by the New York State Agricultural Society and by the Association of Food Journalists.

A.J. Loftin (“Champions of Chocolate”) traces her chocolate persuasion back to that first fateful milkshake in 1957. She has edited national and regional magazines, always with a dark chocolate bar (preferably, Michel Cluizel’s 85 percent, or Scharffen Berger’s 70 percent) at hand. She lives in Litchfield County, Connecticut, and will supply her fatal brownie recipe upon request.
