Henry’s at The Farm

Located on the property of Buttermilk Falls Inn and Spa, Henry’s at The Farm practices the concept of “Barn to Bar.” Bartenders use organic herbs, vegetables, honey, fruits and berries grown right at Buttermilk‘s own 40-acre Millstone Farm as part of their signature cocktails. The bounty is puréed, canned or frozen in season so they can utilize these ingredients all year long.

Favorite cocktail to drink
The Spiced Pear Collins. I love the crispness of the Tuthilltown Half Moon Gin along with the aromatic rosemary and pear puree. The clove-infused simple syrup finishes the cocktail with a little spice. Delicious!

Favorite cocktail to make
The Indigenous Rosemary Martini, because it blends both sweet and tart flavors perfectly, all while using property-grown herbs and locally sourced vodka.

What’s one of the most interesting things that’s happened while you’ve been working?
We have a rescue farm at Buttermilk Falls that gives homes to llamas, alpacas, donkeys, and goats. One time, when I was walking in from employee parking, I noticed about six llamas had escaped the fenced-in pen and it was up to me to get them back in! I was able to get one to follow me and the other five followed suit. Everyone called me the Llama Whisperer after that. That was an interesting day for sure.

Favorite day to work
Sunday, specifically the brunch shift. I get the chance to make my second favorite cocktail, Henry’s House Bloody Mary.



Millstone Farm Spiced Pear Collins

3/4 parts Tuthilltown Half Moon Gin 

3/4 parts Pear-Rosemary Puree (recipe to follow)

1/4 parts Clove Simple Syrup (recipe to follow)

1/4 parts fresh-squeezed lemon juice 

Prosecco 

Build in an ice-filled shaker. Shake ingredients and strain into a chilled martini glass. Top with Prosecco and garnish with a full-moon lime stabbed with a sprig of fresh rosemary.

For the Pear-Rosemary Puree

6-8 medium pears 

3 oz fresh squeezed lemon juice

3 tsp fresh chopped rosemary 

Puree ingredients until fine and smooth.

 

For Clove Simple Syrup 

6-8 whole cloves

1 cup sugar

1 cup water

Bring water, sugar, and cloves to a boil. Lower temperature to a simmer. Simmer for 15 minutes, until smooth and fragrant.
