Creating a Custom Cake

The experts at Caked Up Cafe share their secrets for making one-of-a-kind masterpieces.

The team makes nearly 50 custom cakes a week. The average cake with sugar work takes two to three days to make; orders are requested at least one month in advance.- – – -Weather impacts how long it takes to make a cake. In the summer, sugar doesn’t set up as quickly because of the humidity.– – – –Vanilla cake with cookie dough buttercream filling is the most popular request. French Toast, with cinnamon sugar and maple sugar piped in, is a close second.– – – –All of the decorations are handmade using edible materials. Each rose is made from more than 40 individual fondant petals.– – – –Achieving the luxurious chocolate drips down the sides of the cake can be tricky. You need the right consistency — and a chilled cake — to prevent the ganache from running to the bottom of the cake and turning into a puddle.

We can’t get enough of the colorful, crazy-delicious, custom creations from Caked Up Cafe in New City. And while we can get plenty of visuals by following their Instagram (which is amazing, by the way), we want to know, “How the heck do they do that?” Here’s the lowdown from owner Denise Byrnes and her daughter Francesca Byrnes, senior cake decorator.
